My first experience with parsley was during Passover Seder as a young boy. I knew it as the bitter herb that we dip in saltwater. I always enjoyed the bitter taste. These days I love to dial it up in a few different ways to reap the rewards of this underrated superfood.
Parsley includes more nutrients than you might suspect. So much, it has been used in herbal medicine for centuries. Here's the punch this super herb packs.
It protects our hearts with folate.1
It strengthens our bones with Vitamin K.2
It supports our immune system with Vitamin C.3
Its flavonoids and carotenoids protect our cells from free radicals.4
And it protects our eyes with Vitamin A as well as lutein, beta carotene, and zeaxanthin.5 6
Some ways you can get parsley into your rotation include chopping it up in a salad, mixing it with eggs, bake it into bread, garnish pasta or soups, make a pesto, and my personal favorite--adding it to smoothies.
